
A GREAT, meatless meal for your busy nights!!
Time to prepare: 35 minutes

1 c quinoa, dry
2 c water (for cooking quinoa)
10 oz Mild Enchilada Sauce
1 c Low fat Mexican Cheese
1 c corn, drained and rinsed
1 c beans of choice, drained and rinsed
Cilantro to taste
Optional: 1 small can Green Chilies (my kids don’t like these so I left them out here)
Optional toppings: Diced avocado and tomatoes
1. Cook quinoa according to package in water.
2. Preheat oven to 375. Spray 8×8 baking dish with non-stick cooking spray.
3. Mix cooked quinoa with all other ingredients.
4. Pour into baking dish and bake for 15 minutes.
5. Top with a bit of extra cheese and optional toppings before serving.
This is a great dish for leftovers. It’s an easy reheat!
