Non-stick Cooking Spray
3/4 c Shredded Cauliflower
1 Whole Egg
Flavor God Cajun and Chipotle Seasoning to taste
(sub Taco Seasoning)
4 egg whites
2 Tbsp Salsa
Finely Chopped Cilantro as garnish
Optional: Low-fat shredded cheese (not added in macros above)
1. Heat a small pan on the stovetop medium. Spray with cooking spray.
2. Mix cauliflower, whole egg, and seasoning.
3. Pour mixture into heated pan and brown on both sides.
4. Remove cauliflower ‘hash brown’ from pan and spray again with non-stick spray.
5. Cook egg whites in the pan.
6. Layer cauliflower hash brown, salsa, eggs, and cilantro.
Optional: Sprinkle with Low-fat shredded cheese. Yum!!
