Here is one of my favorite healthy burger recipes…because who can survive the Spring and Summer grilling seasons without burgers!? ENJOY
Salsa Verde Burger with Avocado
1 avocado, halved and pitted
1/2 cup Plain Greek yogurt
1 clove garlic, finely chopped
1 pound lean ground turkey
1/2 cup salsa verde
4 slices reduced-fat pepper Jack cheese (about 4 ounces)
4 gluten-free buns
1 cup fresh cilantro leaves, coarsely chopped
2 small tomatoes, sliced
- In a small bowl, mix the avocado, yogurt, and garlic with a fork. It will be a little chunky. Season with salt.
- In another bowl, combine the turkey and salsa. Make 4 patties and cook in a large skillet over medium-high heat for about 4 minutes on one side.
- Flip and top with 1 slice cheese. Cover and cook another 4 minutes or until no longer pink in the middle.
- Spread avocado onto lower half of the bun then top with cilantro. then add the turkey patty, tomato slices. and your bun top!
