Today I’ve got my little ninjas here with me to make one of their favorite sweet snacks. It is packed with heart-healthy coconut and almonds, so you can feel good about giving it to your kids as well as eating it yourself!
Unlike chocolate or sugary sweets, recipes made with ‘good fats’ fill you up and keep you satisfied for longer. And they won’t derail you from your goals.
Grab one of these melt-aways from the fridge or freezer when you need a sweet pick me up but don’t want to get off track with your nutrition!
Or crumble one in some Greek yogurt for a high protein-packed meal!
Lemon Melt Aways, serves 8
1 cup shredded unsweetened coconut
1/4 cup almond flour
1 1/2 -2 tbsp honey
1 1/2 tbsp coconut oil (if mixture is too dry add a bit more)
Juice of 1/2 lemon
Place all ingredients into medium bowl and mix well.
Spoon out 1 tablespoon of the mixture and roll into a small ball.
Place on a lined tray and chill in the fridge/freezer until firm.
These will keep for 3-4 days, but I guarantee they won’t last that long!
