CREAMY SHRIMP VEGGIE BOWL
One of my favorite Asian restaurants in Kansas City, the Kona Grill, serves this amazing Tuna Tower. However until recently I thought I could never duplicate it at home. Until I came across a version by SkinnyTaste and my mind started racing!
However, looking at the recipe, the portions that I like to stick with on my fit meal plan didn’t quite add up. So I set out last week to make my own version…and found success!! With a little help from my girls in the kitchen, we created the Creamy Shrimp Veggie Bowl with the perfect portions to fit the WOW nutrition protocol. If the can do it, so can you. It’s easy, quick, and tasty! And ok, maybe it’s more of a big mixture than tower, but the tower always gets smoothed anyway.
Ingredients:
1/3 c cooked Brown or Jasmine Rice
1 T Rice vinegar, mango flavor optional
1 c chopped Cucumber
1 tsp. chopped Chives, fresh or freeze dried
1/2 small Avocado, mashed (about 1.2 oz)
1/2-1 T Bragg’s Liquid Aminos
1 T Plain Greek Yogurt
4 oz cooked Shrimp, chopped into 1-inch pieces
Sesame Seeds for garnish, optional
Directions:
- Mix together Bragg’s and Greek yogurt.
2. Place all ingredients except sesame seeds in a bowl.
3. Top with sesame seeds and more Bragg’s if desired. (Above I layered in order: rice, cucumber, chives, avocado, yogurt mixture, shrimp, and sesame seeds. But you can put it in the bowl however you want.)
4. Stir well to combine and enjoy!
