After working with hundreds of women, the biggest hurdle they all have is that they don’t have enough time to prepare healthy meals.
That TIME is the biggest road block to reaching their goals.
Hey, I get it! Life is hectic! I’m certainly not perfect all the time. I can honestly say that I fall victim to the time crunch as well.
But, thats when I get back to the basics. Meals don’t have to be complicated to taste good!
Here are two SIMPLE, AFFORDABLE, and HEALTHY recipes that I use when I know I have a busy week coming up.
Eat them right away or save them in portioned containers or baggies for quick grab-n-go meals.
Cheddar Broccoli Egg Muffins
Makes 6 muffins
Preheat oven to 375 degrees. Coat a 6 hole muffin tin with oil.
Chop 1 c streamed broccoli and place it in a bowl with 4 eggs and 1/2 tsp each sea salt + pepper if you desire those. Whisk together.
Pour egg mixture into muffin tins and divide 1/2 cup part-skim shredded cheddar cheese evenly among them.
Bake for 12-15 minutes, or until the eggs are set.
You could sub any veggie or cheese here, but most are particular to the cheddar broccoli combo.
Yogurt Bark
Makes 4 servings
Spread the mixture into an even layer on a parchment-lined baking sheet.
Top with your choice of 1 cup chopped fruit and 1/2 cup nuts, then freeze until set.
Break the bark into pieces and store it in an airtight container in the freezer.
