I prepped these thinking they would last me a few days but my family ate almost all of them! They aren’t super sweet, just sweet enough, and chock-full of nutrients. If you like a hearty muffin, you’ll love these.

Recipe and macros
Ingredients:
2 cups quick oats, ground into flour
1/2 cup Stevia
1 tbsp baking powder
1 tsp Pumpkin pie spice
1 tsp cinnamon
pinch sea salt
1 cup mashed sweet potato
1 cup unsweetened almond choice, or milk of choice
1 large egg
1 tsp vanilla extract
Optional add-ins (not included in macros): 1/3 c raisins, nuts, or mini chocolate chips
Directions:
Preheat the oven to 350 degrees spray 12 muffin tins/ 24 mini muffin tins with non-stick cooking spray.
In a large high-speed blender, combine all the ingredients and blend until a smooth batter remains.
Evenly distribute the batter amongst the 12-muffin tin until almost full. Bake for 25-30 minutes, or until a toothpick comes out clean.
Remove from oven and allow to sit for 10 minutes before removing. Cool on a dry surface.
Macros per muffin (or 2 mini muffins):
21 g carbs, 2.3 g fat, 4.1 G protein
